ORANGE SMOOTHIE We were looking for ways to incorporate more pumpkin into our diet, so Gary experimented with a pumpkin smoothie one evening. He started with orange juice, threw in frozen banana slices and pumpkin … and of course it needed a dash of cinnamon. (When you have bananas that are ripening too quickly, cut into slices and place single-file on a baking sheet. After banana slices have frozen, you can store them in a plastic container in the freezer.) 1. Place all ingredients in a high-powered blender and blend on high speed for 30-45 seconds: ⅓ cup orange juice concentrate (do not dilute) 1 cup frozen banana slices ¾ cup canned pumpkin 6 ice cubes 1 cup orange juice (use more OJ for a thinner smoothie) ½ tsp cinnamon 2. Yields two tall glasses.
