PORTOBELLO MUSHROOM AVOCADO SANDWICH

We like to make deli sandwiches using a French roll - featured here is a cracked wheat sourdough version.

1. In  in a skillet over medium heat, melt:

1 Tbsp Natural Buttery Spread

2. Sauté for 3-4 minutes until tender:

1 Portobello mushroom, sliced

Salt and pepper, to taste

3. Spread bread with Vegenaise and a honey or Dijon mustard.

4. Layer with:

Fresh spinach

Portobello mushroom slices

Avocado slices

Tomato slices

Sliced olives

Red onion rings

Dill pickle slices

5. Makes 2 hearty sandwiches.
