| My sister-in-law, Cheryl, sent this recipe
(I'm sure she doesn't recognize it after all the tweaks). This is not a
light, fluffy muffin, but it's very good and chewy ... and a great way
to add a high concentrate of fiber to your diet.
1. Preheat oven
to 425 degrees. Spray
large-sized muffin tins with olive oil cooking spray.
2. In a large bowl,
combine:
2½ cups oat bran
½ cup
chopped pecans
2 tsp baking powder
¼ tsp salt
1 tsp cinnamon
3. Whisk together
in a medium bowl:
½ cup
Egg Starts
½ cup rice milk
½ cup Wax Orchards Fruit Sweet
2 Tbsp olive oil
1 ripe banana, mashed
4. Pour wet ingredients
into dry ingredients and whisk just until blended.
5. Fold in:
1 cup
blueberries
6. Fill muffin tins
to the top with batter. Bake for 12-15 minutes. Yields
12 large muffins. |
