    RAISIN CINNAMON BREAD

 

There’s nothing like the smell of homemade bread hot out of the oven, especially if it has cinnamon in it. This recipe is a little more work because you have to knead the dough for 10 minutes, but well worth the effort.

1. In a small bowl, dissolve together:

¼ cup lukewarm water

2½ tsp yeast 

2. In a large bowl, pour 1 cup boiling water over:

2 Tbsp Earth Balance buttery sticks

1½ cups granola

2 Tbsp Fruit Sweet

½ cup orange juice

1¼ tsp salt

1½ tsp cinnamon 

3. Stir in:

Dissolved yeast

1 cup whole wheat pastry flour 

2 cups unbleached white flour

4. Turn dough out onto floured surface and knead 8 minutes, adding a little more flour to keep dough from sticking to hands. 

5. Add and knead for an additional 2 minutes:

2 cups raisins 

6. Spray large bowl with olive oil spray, place dough in bowl and turn to coat top side. Cover with a damp warm cloth and let rise in a warm place until doubled in size, approximately 1½ hours. 

7. Spray 9x5” bread pan with olive oil cooking spray. Punch dough down and shape into loaf, placing in bread pan. Let rise for about an hour. 

8. Bake in preheated 375-degree oven for 35 minutes (loosely cover with aluminum foil for the last 10 minutes to keep from turning too brown)

9. Let cool for 5 minutes, and then turn out onto bread board. When cool enough to slice, serve warm with buttery spread and honey.
