   GRILLED ALBACORE SANDWICH

 

If you like tuna sandwiches, you’ll really like this grilled albacore version with its added vegetables and seasonings.

1. In a medium bowl, toss together:

2 (6-oz) cans albacore in water, well-drained

¼ red bell pepper, finely chopped

1-2 green onions, sliced

¼ red onion, finely chopped

1 stalk celery, finely chopped

2. To make dressing, in a small bowl combine:

¼ cup Vegenaise

¼ tsp garlic salt

1 tsp Italian seasoning

2 tsp dried parsley flakes

3 Tbsp grated Parmesan cheese

3. Stir dressing into albacore, adding more Vegenaise if mixture doesn’t hold together well.

4. Preheat skillet over medium-high heat. Meanwhile, spread 6 whole wheat bread slices sparingly with Earth Balance natural buttery spread.

5. Place buttery side of three slices on hot skillet. Carefully spoon on albacore mixture; top with thinly-sliced tomato and remaining slices of bread, buttery side up.

6. Grill sandwiches until golden brown, flipping once and checking the underside from time to time. Makes 3 sandwiches.
