Gary went scouting the grocery store shelves for granola but was
surprised to learn that most of them included unhealthy sugars high on the list of
ingredients. So I pulled out an old granola recipe from back when we had munchkins
underfoot ... and the result is a not-too-sweet,
crunchy-with-nuts version. 1. Preheat oven to 300 degrees.
2. In
large bowl combine:
8 cups old-fashioned oats
1 cup sunflower seeds
½ cup wheat germ
½ cup
ground flax seed
3 cups chopped nuts (I use
a combination of almonds, pecans and walnuts)
3 . Combine in heavy saucepan over medium heat until blended (do not boil):
½ cup water
½ cup olive oil
1 cup
Wax Orchards Fruit Sweet
½ tsp salt
3 tsp cinnamon
2 tsp vanilla
4. Pour warm liquid over
dry ingredients and stir until coated.
5 . Spread mixture evenly over two 12x17" cookie sheets. Bake for 50
minutes, stirring every 15-20 minutes, until golden brown (edges will brown first).
6 . Let cool completely on cookie sheets before storing in airtight
container. Serve with mixed berries or raisins. Makes
approximately 12 cups. |
