   GRANOLA

Gary went scouting the grocery store shelves for granola but was surprised to learn that most of them included unhealthy sugars high on the list of ingredients. So I pulled out an old granola recipe from back when we had munchkins underfoot ... and the result is a not-too-sweet, crunchy-with-nuts version.

1. Preheat oven to 300 degrees.

2. In large bowl combine:

8 cups old-fashioned oats

1 cup sunflower seeds

½ cup wheat germ

½ cup ground flax seed

3 cups chopped nuts (I use a combination of almonds, pecans and walnuts)

3. Combine in heavy saucepan over medium heat until blended (do not boil):

½ cup water

½ cup olive oil

1 cup Wax Orchards Fruit Sweet

½ tsp salt

3 tsp cinnamon

2 tsp vanilla

4. Pour warm liquid over dry ingredients and stir until coated.

5. Spread mixture evenly over two 12x17" cookie sheets. Bake for 50 minutes, stirring every 15-20 minutes, until golden brown (edges will brown first).

6. Let cool completely on cookie sheets before storing in airtight container. Serve with mixed berries or raisins. Makes approximately 12 cups.

This tweaked version of a favorite old recipe has a wonderful cinnamon flavor and is chock full of nuts.
