   IRISH OATMEAL with BERRIES
  
I’ve never been a big fan of cooked oatmeal, but not too long ago we stayed at a bed & breakfast and were served steel-cut oats—the inner portion of the oat kernel that has been cut into only two or three pieces. Needless to say, now we love its rich, nutty consistency!

1. The evening before, boil 2 cups of water in a heavy saucepan. Remove from heat and stir in ½ cup steel-cut oats. Cover pan with lid and let set overnight.

2. In the morning, remove lid and bring to a boil. Turn down heat and gently simmer for 9 minutes.

3. Stir in 1 cup fresh or frozen berries (I like to use a mix of blueberries, raspberries and blackberries).

4. Serve warm, drizzled with 1-2 Tbsp real maple syrup. Makes 2 large servings.

NOTE: For a cinnamon maple flavor, omit berries. After oatmeal has cooked the full 9 minutes, stir in 1 tsp cinnamon and 1 cup raisins. Divide into 2 large bowls and drizzle with a small amount of real maple syrup.

Normally it takes about 45 minutes to cook steel-cut oats, but if you do a little preparation the night before, it shortens the cooking time to nine minutes.
