CINNAMON WAFFLES

These waffles are quick and easy and laced with cinnamon. While Gary prefers real maple syrup on his waffles, I like mine smothered in berries with a slow drizzle of marionberry syrup on top (Wax Orchards makes a really good fruit-sweetened marionberry syrup).

1. Lightly spray waffle iron with olive oil cooking spray and heat.

2. In medium bowl, stir together:

2 cups whole wheat pastry flour

2 tsp baking powder

½ tsp salt

2 tsp cinnamon

3. In a small bowl, whisk together:

2 eggs (or equivalent in egg whites)

2 Tbsp olive oil

1 cup soy or rice milk

4. Pour wet ingredients into dry ingredients and stir just until blended (batter will be thick until you add the applesauce).

5. Stir in (but do not over-stir):

1 cup unsweetened applesauce

6. Bake waffles until golden brown, approximately 4 minutes.

7. Top with berries and drizzle with real maple syrup or Wax Orchards Marionberry Syrup. Makes six 7" round waffles.
