   SALMON CAESAR SALAD
 
The Creamy Garlic Caesar dressing plays a key role in this tasty salad. You can throw together a Caesar salad topped with salmon or chicken breasts and homemade Italian Seasoned Croutons for a light supper al fresco.

1. To make Creamy Garlic Caesar Salad Dressing, in a medium bowl combine:

1½ cups Vegenaise

2 Tbsp red cider vinegar

2 cloves garlic, minced

1 tsp Wax Orchards Fruit Sweet

¼ tsp dry mustard

½ tsp salt

Pinch of pepper

2. Whisk until smooth and chill for at least one hour.

3. Spray salmon portions with olive oil cooking spray; sprinkle with lemon pepper and grated Parmesan cheese. Microwave on high until done, approximately 6-7 minutes, checking every 2 minutes for doneness.

4. Meanwhile, with kitchen shears cut Romaine lettuce into 1" strips crosswise. Toss with small amount of Creamy Garlic Caesar Salad Dressing and black olives sliced in half.

5. On bed of Romaine lettuce, place cooked salmon. Top with homemade croutons and grated Parmesan cheese. Serve additional dressing on the side.
