MARINARA
SAUCE with ZUCCHINI This marinara sauce not only contains lycopene, great for combating prostate cancer, but is also loaded with vegetables. 1. In a large skillet, brown:
2. Drain and set aside. Wipe skillet with a paper towel. 3. In same skillet, heat 1 Tbsp olive oil over medium-high heat. Sauté 2-3 minutes, just until tender crisp:
4. In a large pot, heat over medium-high heat:
5. Stir in and bring to a gentle boil:
6. Meanwhile, in a small bowl combine:
7. Stir spices into gently bubbling tomato sauce until blended. Drop in:
8. Turn heat down and let sauce simmer for a minimum of 30 minutes. Taste during simmering process (depending on your tastes, sauce may need more Italian seasoning). 9. Serve over whole wheat thin spaghetti and top with shredded Parmesan cheese. Makes enough to feed 10-12 people (I always make the full batch because it freezes well).
