   MARINARA SAUCE with ZUCCHINI

 

This marinara sauce not only contains lycopene, great for combating prostate cancer, but is also loaded with vegetables.

1. In a large skillet, brown:

1 lb. ground turkey or buffalo

2. Drain and set aside. Wipe skillet with a paper towel.

3. In same skillet, heat 1 Tbsp olive oil over medium-high heat. Sauté 2-3 minutes, just until tender crisp:

1 zucchini, quartered lengthwise and sliced in fat slices

1 red bell pepper, diced in small cubes

4-5 large mushrooms, sliced

1 small yellow onion, chopped

3 cloves garlic, minced

4. In a large pot, heat over medium-high heat:

2 (15-oz) cans tomato sauce

1 (12-oz) can tomato paste

1 (14-oz) can diced tomatoes

3 cups water

3 Tbsp Wax Orchards Fruit Sweet

5. Stir in and bring to a gentle boil:

Browned meat

Sautéed vegetables

1 cup chopped fresh spinach

2-3 Tbsp fresh snipped parsley

2 green onions, sliced

½ cup sliced olives

6. Meanwhile, in a small bowl combine:

2 Tbsp cornstarch

2 Tbsp Italian seasoning

2 tsp garlic salt

2 tsp Mrs. Dash’s seasoning

7. Stir spices into gently bubbling tomato sauce until blended. Drop in:

1 bay leaf

8. Turn heat down and let sauce simmer for a minimum of 30 minutes. Taste during simmering process (depending on your tastes, sauce may need more Italian seasoning).

9. Serve over whole wheat thin spaghetti and top with shredded Parmesan cheese. Makes enough to feed 10-12 people (I always make the full batch because it freezes well).

Lycopene, a powerful antioxidant, is mainly found in tomatoes, and believe it or not, tomato sauce or paste may be an even better source than raw tomatoes.
