   MARINATED TUNA STEAKS

If you’re looking for a variety of fish entrees, try these marinated tuna steaks for something different—very tasty served with brown & wild rice blend, a broccoli or green salad, and fresh fruit.

1. To make marinade, blend together:

¼ cup orange juice

¼ cup soy sauce

¼ cup white wine

2 Tbsp olive oil

1 tsp lemon juice

1 clove garlic, minced

1 Tbsp dried parsley

1 tsp dried oregano leaves

½ tsp lemon pepper

2. Anywhere from overnight to 30 minutes before cooking, marinate 4 (4-oz) tuna steaks in marinade, turning occasionally.

3. Place tuna steaks on foil-lined baking sheet under a low oven broiler setting and cook, turning every 3-4 minutes until no longer red on the inside, spooning marinade over steaks each time you turn. Discard any leftover marinade. Serves 4.

Reports indicate that higher concentrations of Omega-3 fatty acids are found in the skin and oil of all fish, particularly in salmon and tuna.
