This sauce is quick and easy to cook up
and can be served your favorite pasta (penne pasta is pictured here). It
also refrigerates well, making great left-overs.
1. In a large skillet, heat 2 Tbsp olive
oil; sauté 1-2 minutes:
1 small white onion, coarsely chopped
2 cloves garlic, minced
1 green bell pepper, diced in small
pieces
2. Stir in:
1 lb turkey sausage,
thinly sliced
2 (14.5-oz) cans diced tomatoes,
including juice
8 fresh basil leaves, chopped
1 tsp Italian seasoning
½ tsp salt
¼ tsp pepper
3. Cover and let sauce simmer 10 minutes.
Remove lid and let simmer an additional 10 minutes.
4. Meanwhile, cook whole wheat penne
pasta according to package directions. Drain and stir in 1-2 Tbsp olive
oil to coat.
5. Serve sauce over penne pasta; top each
individual serving with a low-fat cheese. Makes 4 servings. |
