I found a bakery in town that lets me buy
frozen whole wheat Italian bread dough, which makes this a quick and simple meal to
prepare. If you like a thin-crusted pizza, don't use the full loaf of bread.1.
About 3-4 hours before baking, set out:
1 loaf frozen whole wheat
French or Italian bread dough (dough will thaw and raise slightly)
2. Spray 15" round
pizza stone or pizza pan with olive oil cooking spray. Shape dough into a ball and roll
out flat onto stone or pan.
3. Preheat oven to 425
degrees.
4. In the following order,
spread or sprinkle onto pizza dough:
6 oz tomato paste
1 tsp Italian seasoning
5. Layer with your
favorite ingredients in the following order:
Grated Parmesan cheese
Tomatoes, sliced thin
Mushrooms, sliced
Zucchini, sliced thin
Yellow squash, sliced thin
Red bell pepper, sliced
Green bell pepper, sliced
Red onion, sliced thin and separated into rings
Black olives, sliced
Green onion, sliced
6. Bake 15-18 minutes.
Makes one 14" pizza, enough for 4-5 people.
OPTIONAL: Try adding a can of
well-drained crushed pineapple ... or heat 1-2 cups cooked, diced chicken and 1/2 cup
Garlic Ranch Dressing over medium heat
and add to line-up of pizza toppings.
