   TEN-VEGGIE TOSTADOS
 
Technically this is an 8-veggie/2-fruit tostado (if you recognize that tomatoes and avocados are fruit), but the recipe title takes up less room as written! These tostados are hearty and nutritious and easy to make for a Saturday lunch crowd. Slice and dice all ingredients into separate bowls, heat the refried beans in the microwave, fry the tortillas … and let your guests build their own tostados.

1. Prepare all vegetables and fruit in separate bowls:

Red bell peppers, diced

Yellow bell peppers, diced

Green bell peppers, diced

Tomatoes, diced

Black olives, sliced

Ortega green chilies

Red onion, chopped

Green onion, sliced

Avocado, sliced

Follow Your Heart Vegan Gourmet Cheese, grated 

2. Heat 2-3 Tbsp olive oil in large skillet over medium heat; fry until crisp and golden, adding more oil as needed:

Whole wheat flour tortillas (a flour/corn combination tortilla also works well) 

3. Transfer tortillas to paper towels to drain. 

4. Meanwhile, heat in microwave or in saucepan on stove until steaming:

Canned or homemade refried beans, seasoned to taste with garlic salt, chili powder, cumin, and pepper 

5. Spread a layer of refried beans on crisp tortilla. Sprinkle with cheese and then top with vegetables and fruits.   

6. Drizzle with:

Tomato salsa 

7. Top with:

Fresh cilantro, snipped in small pieces

Despite their name, refried beans are not fried; they're actually mashed pinto beans, low-fat and  loaded with fiber and protein.
