Broccoli Apple Pecan Salad

This salad is a fun variation on the Broccoli Raisin Salad. We've added red apples and dried apricots ... and curry to spice up the dressing.      

1. In a large bowl, combine:

3 cups broccoli florets, chopped

1 red apple, chopped

10-12 dried apricots, cut in quarters

½ cup raisins

½ cup pecans, coarsely chopped

½ small red onion, sliced in slender rings 

2. In a small bowl, blend with wire whip:

3/4 cup grape seed Vegenaise

2 Tbsp red wine vinegar

3 Tbsp honey

¼ tsp curry 

3. Pour dressing over salad and mix. Serves 4-6.
