    SPINACH and FRUIT SALAD
 
Instead of spinach salad with fruit, this should probably be called a fruit salad with spinach!

1. Toast 4-5 minutes in a 300 degree oven, watching carefully so they don't burn:

½ cup sliced almonds

2. Toss together in a large bowl:

8 cups fresh spinach

2 red apples, unpeeled, cored and thinly sliced

3 kiwi, peeled and thinly sliced

1 mandarin orange, peeled and sectioned

1 cup fresh strawberries, sliced

1 cup fresh pineapple, cut in chunks

3. To make Raspberry Vinaigrette, in a small bowl combine and whisk:

         1/3 cup raspberry vinegar

         3 Tbsp olive oil

         2 Tbsp Wax Orchards Fruit Sweet

         ¼ tsp dried crushed basil

         1 Tbsp sesame seeds

4. Add Raspberry Vinaigrette to salad and toss well to coat (or you can serve dressing on the side). Top with toasted almonds. Serves 8.

*NOTE: You can use canned mandarin oranges when fresh oranges are not in season.
