| Spinach is our choice of lettuce these days. This
onefeaturing a creamy curry dressingis one of three favorite spinach/fruit
salads featured at this site. 1. In a large bowl, gently toss together:
6 cups fresh spinach leaves
1 Granny Smith apple, cored and
thinly sliced
½ cup cashews or toasted
almonds
½ cup fruit-sweetened dried
cranberries
½ cup golden raisins
½ small red onion, sliced in slender rings
2. To make Creamy
Raspberry Curry Vinaigrette, in a small bowl blend with wire whisk:
1/3
cup Vegenaise
3 Tbsp raspberry vinegar
2 Tbsp
Wax Orchards Fruit Sweet
½ tsp curry powder
3. Top
each individual salad with:
Crumbled feta cheese
4. Serve vinaigrette on
the side. Serves 6-8. |
