ASPARAGUS with MUSHROOMS

Since my childhood days I've thought of asparagus as stringy, but this easy asparagus dish—sautéed in olive oil with mushrooms and onions—dispels that rumor.

1. Heat 1 Tbsp olive oil in large skillet over medium-high heat.

2. Sauté for 3-4 minutes just until tender crisp:

2-3 cups asparagus pieces broken into 1-1½" pieces (tough ends discarded)

6-8 mushrooms, sliced

½ yellow onion, chopped

3. As vegetables cook, sprinkle with:

          ½ tsp garlic powder

          ½ tsp Italian seasoning

5. Serve immediately. Makes enough for 4-6.
