   COUNTRY FRIES
 
My sister-in-law, Laurel, doesn’t like baked potatoes, but she loves these fries. (I don’t have the heart to tell her they are really baked potatoes in the shape of fries.)

1. Preheat oven to 400 degrees.

2. Wash potatoes; remove blemishes or bruises on 4 medium-large red potatoes (do not peel).

3. Combine in large bowl:

2 Tbsp olive oil

½ tsp garlic salt

½ tsp paprika

1 tsp Mrs. Dash's seasoning

4. Slice potatoes into French fry lengths and drop into bowl with oil and spices, stirring to coat well.

5. Arrange slices in single layer on 12x17" cookie sheet. Bake for 45-50 minutes, turning with metal spatula every 15-20 minutes to allow them to brown evenly. Serves 4-5.

Note: You can also bake at 450 degrees for 30-35 minutes for a crispier fry; stir potatoes with metal spatula every 10-15 minutes.
