These roasted potatoes are very similar to
the Country Fries recipe, but a bit dressier. The blend of spices in this recipe is quite
tasty, so try it first before experimenting with your own favorite blend of spices.1. Preheat oven to 425 degrees. Line
9x13" baking dish with aluminum foil.
2. Clean 12 small red
potatoes (do not peel).
3. In large bowl, combine:
¼ cup olive oil
3 cloves garlic, minced
1 tsp salt
1 tsp ground cumin
½ tsp paprika
¼ tsp dried oregano
¼ tsp pepper
4. Slice potatoes into
large chunks. Drop into bowl with oil and spices, stirring to coat well.
5. Arrange potatoes in
foil-lined baking dish. Bake 35-40 minutes until fork tender. Serves 6-8.
